A tasty one- pan winner for kids and adults alike!
1 lb sirloin steak, cut into strips
thinly sliced carrots
1.5 cups snap peas
1 red pepper thinly slices
1/2 onion thinly sliced
2 garlic cloves minced
sweet potato, rice cauliflower or brown rice (depending on your diet)
Let’s get to work
Bake sweet potato in the oven 350 degrees, 30 – 45 min depending on size. Cooked through when the sides give when squeezed. Cook wrapped in aluminum foil.
OR begin preparing rice/ riced cauliflower
In a pan, cook steak strips seasoned with salt and pepper over medium heat until cooked through. Set aside.
In a pan, melt coconut oil. Add carrots, cook x 1-2 minutes, then add red pepper slices, cook x 1-2 minutes. Add Peas, onion and garlic. Cook an additional 1-2 minutes until onions are translucent.
Season each layer with salt and pepper.
Add steak back to the pan and add in stir fry sauce. cook 1-2 minutes until heated through.
Serve over a baked sweet potato, brown rice or riced cauliflower (depending on your diet)
